Spot Prawn Ceviche

Our May recipe takes advantage of Spot Prawn season. Spot Prawns are the largest of the seven commercial types found on the west coast of Canada. Their sweet, delicate taste and firm texture make them ideally suited to this Fresco™ recipe where we essentially let fresh lime juice "cook" (that's what ceviche is) the prawns, then flavour them with vanilla bean and Mirin, a sweet Japanese wine. All you need to cook with this recipe is a fridge!
