A healthy, fast, flavorful dinner recipe, fantastic with grilled fish or chicken.
- 12 Windset Farms™ Concerto™ Grape Tomatoes, halved
- 1 Windset Farms™ Maestro™ Sweet Bell Pepper, seeded and thinly sliced
- ½ Windset Farms™ Fresco™ Seedless Cucumber, thinly sliced
- 1 Windset Farms™ Gusto™ Hot Pepper, seeded and finely chopped
- 1 small carrot, thinly sliced
- 3 Tbsp. fresh cilantro, chopped
- 1 Tbsp. rice vinegar
- 1 Tbsp. fresh lime juice
- 1 Tbsp. fish sauce
- 2 tsp. sugar
Instructions
- Whisk together Gusto™ pepper, sugar, fish sauce, lime juice and vinegar in a small bowl.
- Toss with Fresco™ cucumber, Maestro™ pepper, Concerto™ tomatoes, carrot, cilantro and serve.
