Tomato, Bean and Sausage Stew

- 2 Tbsp. olive oil
- 4 sweet Italian sausages
- 2 cloves garlic, chopped
- 2 sprigs fresh sage, finely chopped
- 1 lb. Roma tomatoes, chopped
- ½ tsp. kosher salt
- 2 cans Cannellini beans, drained
Instructions:
- Heat oil in a large skillet over medium heat.
- Add sausages and brown (about 5 minutes). Add garlic and the sage and sauté for 2 minutes. Add tomatoes and cook for 10 minutes.
- Add beans and salt. Cook for another 10 minutes.
- Plate and serve with a green salad.
