Tomato, Bean and Sausage Stew

  • 2 Tbsp. olive oil
  • 4 sweet Italian sausages
  • 2 cloves garlic, chopped
  • 2 sprigs fresh sage, finely chopped
  • 1 lb. Roma tomatoes, chopped
  • ½ tsp. kosher salt
  • 2 cans Cannellini beans, drained

Instructions: 

  1. Heat oil in a large skillet over medium heat.  
  2. Add sausages and brown (about 5 minutes).  Add garlic and the sage and sauté for 2 minutes.  Add tomatoes and cook for 10 minutes.  
  3. Add beans and salt. Cook for another 10 minutes.
  4. Plate and serve with a green salad.
