Steamed Clams with Tomatoes and Bacon

- ½ lb. smoked bacon, chopped
- 2 Tbsp. olive oil
- 1 medium onion, chopped
- 2 cloves garlic, finely chopped
- 1 Gusto™ Mixed Hot Pepper, finely chopped
- 2 ½ lbs. Allegro™ Tomatoes On The Vine, chopped
- 3 ½ lbs. fresh hard-shelled clams, scrubbed
- 2 cups fresh spinach
- 1 tsp. kosher salt
Instructions:
- Using a 5-6 quart pot, cook bacon in olive oil over medium heat until it begins to brown. Add onion and sauté for 5 minutes. Add garlic and Gusto™ pepper and sauté for 1 minute. Add Allegro™ tomatoes and cook for 8 minutes or until sauce begins to thicken.
- Add clams and cover pot. Cook for another 6 minutes or until clams open. Discard any clams that are not open.
- Add spinach and stir. Season with kosher salt and serve with crusty bread.
