Spicy Tomato and Roast Beef Ciabatta

- 1 lb. Concerto™ Grape Tomatoes, halved
- 1/4 cup extra virgin olive oil
- 3 Tbsp. balsamic vinegar
- 1 tsp. chilli flakes
- 1 tsp. kosher salt
- 1 cup mayonnaise
- ¼ cup fresh basil, chopped
- 1 lemon, zested
- 6 ciabatta buns, halved
- 16 oz. sliced roast beef
Instructions:
- Preheat oven to 425ºF.
- Line a large rimmed baking sheet with foil.
- In a bowl toss Concerto™ tomatoes, olive oil, balsamic vinegar, chilli flakes and kosher salt. Arrange tomatoes on the baking sheet and bake for 30 minutes.
- Mix mayonnaise with lemon zest and basil.
- Spread mayonnaise over cut sides of ciabatta buns. Top with roast beef and spicy Concerto™ tomatoes. Cover with the top halves of the buns and serve.
