Spicy Garlic Chicken with Sweet Pepper Potatoes

Gusto™ Hot Peppers provide spicy, delicate heat in the compound butter resulting in big flavor, while Maestro™ Sweet Bell Peppers sweeten the spuds.
Chicken
- 1 lb. butter, softened
- 3 cloves garlic
- ¼ cup flat leaf parsley
- 2 Gusto™ Mixed Hot Peppers, seeded and chopped
- 1-2 whole 2 lb. chickens
Instructions:
- Preheat oven to 375ºF.
- In a food processor purée the butter, Gusto™ hot peppers, garlic and flat leaf parsley until a chunky paste.
- Rub the mixture under the skin of the chicken liberally. Get it everywhere.
- Place bird(s) in a roasting pan with 2 whole lemons for 45 minutes until juices run clear. When cooked and resting, squeeze the roasted lemon juice onto the bird(s) for additional flavor.
Sweet Pepper Potatoes
- 2 lbs. Yukon gold potatoes, peeled and diced
- 2 red Maestro™ Sweet Bell Peppers
- 1 cup 35% cream
- Salt and pepper
- ¼ cup soft butter
- 1/8 cup chopped chives
Instructions:
- Roast peppers at 375ºF for 30 minutes until tender. Peel, seed and purée.
- Boil potatoes in a large pot of salted water until tender. Mash after they're cooked (approx. 25 minutes) and add butter, cream, chives and Maestro™ pepper purée.
- Season with salt and pepper.
