Roasted Red Pepper Stuffed Turkey Breast

Turkey
- 1 fresh turkey breast (approximately 2lbs.)
- ½ cup red Maestro™ Sweet Bell Peppers, roasted and puréed
- ½ cup soft goat cheese
- 1 Tbsp. fresh thyme
- Kosher salt and black pepper
Vinaigrette
- 2 cups canola oil
- 1 cup red wine vinegar
- ½ cup red Maestro™ Sweet Bell Peppers, roasted and puréed
- 2 Tbsp. Italian parsley
Instructions:
- Preheat oven to 375ºF.
- Slice turkey breast open to create a pocket.
- Spread goat cheese and pepper purée into the pocket. Season with salt and pepper and sprinkle with fresh thyme.
- Roll up and tie the turkey.
- Roast for 30 minutes.
- For the vinaigrette, purée everything in a blender until combined.
- Season with salt and pepper. Pour over top of the roasted turkey breast. Slice to serve and enjoy.
