Red Pepper Banana Bread with Whipped Maple Butter

Banana Bread
- ½ cup soft butter
- 1 cup brown sugar
- 2 eggs, beaten
- 1 cup ripe bananas, mashed
- 1 cup whole wheat flour
- 1 cup all purpose flour
- 1 tsp. baking soda
- 1/3 cup hot water
- ¾ cup chopped walnuts
- 1 cup red Maestro™ Sweet Bell Peppers, roasted and puréed
Whipped Butter
- 1 lb. soft unsalted butter
- 1 cup maple syrup
- 1 cup yellow Maestro™ Sweet Bell Peppers, roasted and puréed
Instructions:
- Preheat oven to 325ºF.
- Melt the butter and add the sugar in a large mixing bowl. Add eggs and bananas, blend until smooth. Add flour, salt and baking soda.
- Stir in hot water and walnuts.
- Add roasted Maestro™ red pepper purée.
- Separate the mixture between 2 loaf pans (or as individual muffins).
- Bake for 1 hour and let cool.
- For the maple butter, beat the softened butter for 5 minutes until light and fluffy in mixer.
- Add maple syrup, Maestro™ pepper purée and combine.
- Serve at room temperature.
