Pepper Ginger Glaze

This is a great spicy, sweet glaze for chicken, beef or pork. It also works well with roasted carrots, yams and turnips.


  • 2 cups sugar
  • 2 Tbsp. fish sauce
  • ¼ cup soy sauce
  • 2 Tbsp. rice vinegar
  • ¾ cup ginger, peeled and finely chopped
  • 2 Tbsp. lime juice
  • 3 cloves garlic, finely chopped
  • 1 Gusto™ Hot Pepper, finely chopped
  • 1 shallot, finely chopped

Instructions:

  1. In a deep pot, heat the sugar over medium/high heat. Caramelize sugar until it turns a golden brown and quickly remove from the heat. Stand back from the pot to avoid splashing yourself and add the fish sauce, soy sauce, rice vinegar, garlic, lime juice, pepper and shallot. Cool.
  2. After grilling chicken breasts, steaks or pork chops brush with Gusto™ Pepper Ginger Glaze and serve.

Yields 2 cupsThe Gusto™ Pepper Ginger Glaze will keep in the refrigerator for 3 weeks.
