Pepper Chutney Turkey Sandwich

This chutney is great as a simple accompaniment to grilled chicken, roasted pork, sausages or a cheese platter.
- 2 Yellow Maestro™ Sweet Bell Peppers, roasted, seeded and skinned
- 4 cups grated Granny Smith apples, skin on, core removed
- 1 cup golden raisins
- ½ cup apple juice
- 1 Tbsp. mustard seeds
- 1 Tbsp. mustard powder
- ½ cup brown sugar
- 3 Tbsp. apple cider vinegar
- 1 cinnamon stick
- baguette(s)
- sliced turkey breast
- Applewood smoked cheddar cheese, sliced
Instructions:
- Combine all ingredients (except for baguette, turkey breast, cheese) in a small pot and bring to a boil.
- Reduce heat and simmer over medium heat for 20 minutes.
- Chill and put in a sealed container. This will keep in the fridge for 1 week. (It can be served warm or cold.)
- Layer turkey breast, cheese and chutney on the baguette. Enjoy.
