Linguini with Tomatoes, Brie and Basil

  • 2 cups Concerto™ Grape Tomatoes, halved
  • 1 small shallot, minced
  • 1 lemon, zested
  • 12 oz. Brie, rind removed
  • 1/3 cup extra virgin olive oil
  • ½ cup fresh basil, chopped
  • 1 lb. fresh linguini

Instructions:

  1. Bring a large pot of salted water to a boil.
  2. Mix Brie, Concerto™ tomatoes, lemon zest, shallots, extra virgin olive oil and basil in a large bowl.
  3. Cook linguini according to package instructions and drain.
  4. Toss hot pasta into the bowl of Brie and tomatoes. Mix well. Serve and enjoy.
