Grilled Scallops With Cucumber, Avocado & Melon Salsa

- 1 Windset Farms™ Fresco™ Seedless Cucumber, cubed
- 1 Tbsp. extra virgin olive oil
- 1 lime, juiced and zested
- 1 lb. honeydew melon, cubed
- 1 avocado, cubed
- 1 Tbsp. fresh basil, finely chopped
- kosher salt and ground black pepper, to taste
- 12 large sea scallops
Instructions:
- Combine Fresco™ cucumber, avocado, honeydew melon, extra virgin olive oil, lime juice and zest and basil in a bowl. Season to taste with kosher salt and ground black pepper.
- Heat a grill to moderate to high heat. Season scallops with salt, grill for 3 to 4 minutes and turn. Grill for another 2 minutes and remove from heat. Serve immediately with salsa.
