Dolce™ Pepper and Spicy Sausage Hero

- 3 Tbsp. olive oil
- 1 red onion, thinly sliced
- 1 lb. Dolce™ Super Sweet Baby Bell Peppers, seeded and sliced
- 2 cloves garlic, minced
- ½ tsp. fennel seeds, finely chopped
- ½ tsp. kosher salt
- 2 Tbsp. balsamic vinegar
- 2 Tbsp. Italian parsley, chopped
- 4 spicy Italian sausages
- 4 Tbsp. mayonnaise
- 2 baguettes, cut in half
Instructions
- Preheat oven to 400ºF.
- Heat large cast iron pan over medium heat and add 2 Tbsp. of olive oil. Add red onion and sauté for 10 minutes. Add Dolce™ peppers, garlic, fennel seeds, salt and sauté for 3 minutes. Add balsamic vinegar and cook for 3 minutes or until balsamic has evaporated. Add Italian parsley.
- Remove pepper mixture from pan and wipe clean. Place back on stove over medium heat and add final Tbsp. of olive oil. Fry sausages on one side for 4 minutes or until nicely browned. Turn over and place in preheated oven. Cook for 15 minutes or until cooked through.
- Remove sausages from oven and slice in half. Toast baguettes and spread mayonnaise on each one. Add Dolce™ pepper mixture and sliced sausage. Serve.
