Citrus Marinated Tomatoes

Tasty tapas for friends and family, citrus marinated Concerto™ Grape Tomato poppers.
- 1 pint Concerto™ Grape Tomatoes
- sherry vinegar
- 2 lemons, zested
- 3 Tbsp. sea salt
- 1 tsp. Spanish paprika
- Spanish olive oil
Instructions:
- Place Concerto™ tomatoes in a small baking dish. Using a skewer, stick/pierce tomatoes a few times each and sprinkle liberally with sherry vinegar. Cover and marinate overnight.
- Zest the 2 lemons and let 'dry' overnight.
- In a spice grinder combine dried lemon zest, sea salt and Spanish paprika.
- Remove the Concerto™ tomatoes from sherry vinegar and toss in Spanish olive oil. Roll tomatoes in lemon, sea salt and paprika mix, place on skewers, serve and enjoy.
