A fresh salad that is great as a main course and fantastic served with grilled chicken.
Dressing
- 4 oz. blue cheese, crumbled
- ½ tsp. kosher salt
- 1 Tbsp. chives, chopped
- ¼ cup sour cream
- ¼ cup buttermilk
- 1 Tbsp. freshly squeezed lemon juice, and the zest
- 1 Tbsp. water
Salad
- 3 heads Delicato™ Mini Romaine Hearts, chopped
- 2 Maestro™ Sweet Bell Peppers, seeded and chopped
- 4 Fresco™ Mini Cucumbers, chopped
- 2 cups Concerto™ Grape Tomatoes
- 1 can chickpeas, drained and rinsed
Instructions:
- In a food processor, combine all the dressing ingredients and purée.
- Toss all the salad ingredients together in a large bowl. Drizzle with the dressing and serve.
