Albacore Tuna and Fresco™ Cucumber Salad

Another summer fresh salad from Chef Dana Reinhardt, the dressing for this dish works wonderfully for seared prawns or scallops.
- 6 oz. sashimi grade, Albacore tuna, diced
- 1/3 of a whole Windset Farms™ Fresco™ Seeedless Cucumber, diced
- 2-inch piece daikon, peeled and diced
- 2 Tbsp. fresh cilantro, finely chopped
- 1/2 Tbsp. fresh lime juice
- 1/4 tsp. kosher salt
- Togarashi, to taste**
- 1 cup mixed baby greens
Dressing
- 4 Tbsp. Mirin**
- 2 Tbsp. rice vinegar
- 2 Tbsp. soy sauce
- 1 Tbsp. Dijon mustard
- 3 Tbsp. extra virgin olive oil
- 6 Tbsp. canola oil
- 1/2 tsp. sesame oil**
- 2 Tbsp. fresh lime juice
- 1/2 tsp. kosher salt
Instructions:
- Whisk together dressing ingredients.
- Toss tuna, Fresco
™ cucumber, daikon, cilantro, lime juice and salt together. Add the dressing, to taste and season with Togarashi. - Divide mixed greens between 4 plates and top with cucumber salad. Serve with crusty bread.
