Pronounced on-deeve, the endive is a tangy, leafy vegetable that belongs to the Daisy family. Loves me. Oh, it loves me, alright. Related to the radicchio, you may also know this as chicory.
Belgian Endives are a hearty, yet sophisticated vegetable that is very versatile - you can eat them baked, steamed, boiled, grilled, raw or braised. Steaming is preferred to boiling as less water is retained by the tightly wrapped leaves. If boiling the endive, be sure to drain it well before serving.
