Featured Recipe: Asparagusto!

This month’s feature recipe, as seen on Global’s Saturday Chefs, is the Grilled Asparagus & Panzanella Salad.

We present the cure for stale bread with this recipe, which makes use of that loaf of bread you were certain you would eat before now. Stale bread rescued by the sweet and juicy little Concerto™ tomato.

If asparagus is unavailable (or you plain don't like it), you can substitute grilled eggplant or zucchini.

How to make the (almost) famous Windset Farms™ Five Pepper Jelly!

5 Pepper Jelly

You've been so patient. We've teased you at food shows. Taunted you at events. "Who sells it? Where can I buy it?" You do. At your place. Here's what you'll need:

  • ½ pound Maestro™ Sweet Bell Peppers
  • ½ pound Crescendo™ Sweet Pointed Peppers
  • ¼ pound Dolce™ Super Sweet Baby Bell Peppers
  • ¼ pound Misto™ Sweet Bell Peppers
  • 3 Gusto™ Mixed Hot Peppers, seeded
  • 3 ½ cups sugar
  • 1 cup cider vinegar
  • 4 T liquid pectin

Special equipment: instant-read or candy thermometer, canning tongs

Instructions:

  1. Cut peppers into 1-inch pieces and in a food processor chop them very finely (remember to remove the Gusto™ seeds - they're HOT!). Transfer the chopped peppers to a deep kettle, add the sugar, the vinegar, and bring the mixture to a boil, stirring until the sugar is dissolved.
  2. Stir in the pectin and boil the mixture over moderately high heat, stirring, until it reaches the jelly stage (222ºF on a candy thermometer). Transfer the jelly to the sterilized Mason-type jars, filling the jars to within ¼ inch of the tops. Run a clean silicone spatula between the jelly and the sides of the jars to eliminate air bubbles. Wipe the rims with a dampened towel and seal the jars.

Yield: 5 ½ pint jars of jelly. Download the recipe card here.

Cucumber is a popular beauty treatment for the skin. It delivers hydrating, nourishing and astringent properties and helps to balance the skin's protective and natural acid properties. Cucumber skin contains plenty of vitamins and minerals, including vitamin A, E, magnesium, and potassium. They, combined with the cucumber's cleansing ability, work to make your skin soft and supple.

Eating cucumber is just as good for the skin but in different ways: it's rich in silica (a mineral that strengthens connective tissues) and also acts to promote a healthy complexion and skin elasticity. But today we're using it for an out-of-body experience. Cucumber can help:

  • Reduce the appearance of dark circles
  • Treat puffiness around the eyes
  • Reduce the appearance of wrinkles
  • Improve complexion
  • Relieve the symptoms of a sunburn
  • Tighten pores

Let's put our Fresco™ cucumber to the test with this concoction: FrescoFace facial mask for oily skin.

What you'll need:

  • ½ a Fresco™ seedless cucumber
  • 1 egg white
  • 1 tablespoon lemon juice
  • 1 teaspoon mint

What you'll do:

  1. Purée all ingredients.
  2. After blending, place them into the fridge to chill.
  3. Apply the mixture to your face and leave it on for 15 minutes. Stay away from windows. And cameras.
  4. Take off the mask with warm water and finish with a rinse with cool water.
